Beñat Bonnet, an inventive young chef, took over the kitchen management of the family restaurant after working for five years at Plaza Athénée and Arrambide in Saint-Jean-Pied-De-Port.
As a child of the Country, he very quickly created privileged relationships with local producers and in the kitchen seasonal products are available in unique modern and inventive recipes.
